Pastificio Avesani was set up way back in 1951 by the inventive and imaginative Ugo and Iole Avesani, who started the company as a fresh pasta workshop in Bussolengo, in the province of Verona. (how to reach us).
In those days, the tortellini were made by hand, one by one.
Since then the company has changed but the emphasis on the quality of its ingredients has remained the same, and “Granpa’s recipes” are still part of the family tradition.
As in the old days, the ingredients are the same as those used for homemade filled pasta: a thin sheet of pasta and a rich filling.
The flavour is that of tasty, carefully selected meats, ham and seasoned grana cheese, the refreshing savour of fresh ricotta, or the more sophisticated aromas of porcini mushrooms, truffles and red chicory.
The company’s modern production processes are the result of an ambitious technological development programme designed to respect local traditions.
All the pasta is made in a protective atmosphere, with a shelf life of 60 days. This means the package is further protected from attack by air-borne micro-organisms that might otherwise deteriorate the product.
The choice of special flours to give the pasta perfect compactness and roughness, the doughs and fillings made to original recipes, and the closest attention to tastes and aromas, make the product a perfect balance between innovation and tradition.
