Avesani ... "Le Bontà Doc"
Pastificio Avesani was set up way back in 1951 by the inventive and imaginative Ugo and Iole Avesani, who started the company as a fresh pasta workshop in Bussolengo, in the province of Verona. (how to reach us).
In those days, the tortellini were made by hand, one by one.
Since then the company has changed but the emphasis on the quality of its ingredients has remained the same, and “Granpa’s recipes” are still part of the family tradition.
As in the old days, the ingredients are the same as those used for homemade filled pasta: a thin sheet of pasta and a rich filling.
The flavour is that of tasty, carefully selected meats, ham and seasoned grana cheese, the refreshing savour of fresh ricotta, or the more sophisticated aromas of porcini mushrooms, truffles and red chicory.
The company’s modern production processes are the result of an ambitious technological development programme designed to respect local traditions.
All the pasta is made in a protective atmosphere, with a shelf life of 60 days. This means the package is further protected from attack by air-borne micro-organisms that might otherwise deteriorate the product.
The choice of special flours to give the pasta perfect compactness and roughness, the doughs and fillings made to original recipes, and the closest attention to tastes and aromas, make the product a perfect balance between innovation and tradition.
The freshness and the quality of the raw materials ensures that the pasta maintains ideal elasticity and responds perfectly to cooking.
The modern production processes used by the company are designed to make sure that customers who demand absolute respect for a whole range of different local traditions each obtain exactly what they want.
Special types of flour give the pasta ideal consistency. The doughs and the fillings are made to exclusive recipes created in-house in order to provide a complete range of products with the original tastes and flavours of the finest traditions of Italian cuisine.
Uncompromising attention to hygiene and to EU production and storage regulations, and innovative storage and distribution methods mean that the consumer can always be sure of a fresh and genuine product.
A prime example of “innovation and imagination that respects tradition through diversification” can be seen in the Nodini d’Amore of 1998.
An exclusive Pastificio Avesani creation, Nodini d’Amore – literally, little “love knots” – consist of a specially designed shell of fresh egg pasta which contain a small pearl of particularly compact filling.
Pastificio Avesani products include the finest symbols of Italian pasta tradition, all of them ideal for every type of sauce: fresh filled pasta (tortellini, tortelloni, ravioli), fresh egg pasta (tagliatelle, bigoli, lasagne, and macaroni), potato gnocchi and gastronomy products are all made to satisfy the most demanding connoisseurs who like to vary their menus to suit the season. Innovation, imagination and tradition for tasty dishes every day.
